Scallops and Spinach over Pasta

A healthy pasta recipe with a great combination of vegetables and scallops! This recipe yields 10- 11 servings.

Scallops and Spinach over Pasta

Ingredients

  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 3 pounds bay scallops, raw
  • 12 ounces spaghetti
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • garlic powder to taste
  • salt and pepper to taste
  • 1/4 cup water

Directions

  1. First, bring a large pot of lightly salted water to a boil.
  2. And then, add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. Meanwhile, in a medium skillet, saute spinach in olive oil until heated through. Add lemon juice, garlic powder and water.
  4. Next, add scallops and cook for 3 minutes or until done. Be careful not to overcook. Season with salt and pepper to taste.
  5. Lastly, place strained spaghetti in dish and place the scallops and sauce on top.
  6. Scallops and Spinach over Pasta is ready to serve! This is best served with grated Parmesan cheese.
