Quick and Easy Baked Penne Recipe
This super easy baked penne recipe takes almost no time at all and will please even the pickiest eater. This recipe yields 6 servings.
Ingredients:
- 16 ounces pasta, penne
- 1/2 cup onion, chopped
- 1 large can tomatoes, broken up
- 2 cloves garlic, finely minced
- 1 tablespoon vegetable oil
- 1 teaspoon dried leaf oregano, crumbled
- 1 1/2 to 2 cups shredded Mozzarella cheese, divided
Directions:
- In a large pot with boiling, salted water, cook penne pasta until desired consistency. Drain and put aside.
- Heat vegetable oil in a pan and add onion, sauteeing for about 4 minutes, or until onion is softened.
- Add garlic, tomatoes and oregano and cook until heated through. Add salt and pepper to taste.
- Combine the cooked penne, tomato mixture, and 1 cup shredded cheese. Pour into lightly greased casserole.
- Preheat oven to 350F.
- Sprinkle remaining cheese on top and bake for about 20 minutes.
