Pesto Pasta With Smoked Salmon
This is one of my favorite pasta recipes because it’s easy to make, and it’s extremely delicious! This recipe yields 4 servings and is ready in just 30 minutes (prep and cooking time included!).
Ingredients:
- 8 ounces/225g of spaghetti
- 5 ounces/140g of smoked salmon, cut into small pieces
- 1 garlic clove, crushed
- 1 onion, chopped
- 2 cups of fresh, sliced mushrooms
- 3/4 cup of prepared, basil pesto sauce
- 2 tablespoons of olive oil
- 3 tablespoons of tomato paste
- 1 tablespoon fresh basil, chopped
- 1/4 cup of water
Directions:
- Bring large pot of water to a boil and add pasta. Cook until al dente.
- Cook olive oil over medium heat in a skillet. Add onion, mushroom, and garlic cooking until onion becomes transparent and mushrooms are tender.
- In the same skillet, stir in the tomato paste, fresh basil, pesto sauce, water, and smoked salmon.
- Cook slowly for 10-15 minutes or until desired consistency.
- Drain pasta and pour the sauce over.
