Pepperoni Penne
A pasta recipe that spices up the flavors of pepperoni with Italian ingredients. This recipe yields 7- 8 servings!
Ingredients
- 1 (16 ounce) package penne pasta
- 2 tablespoons grated Parmesan cheese
- 3/4 pound sliced pepperoni sausage
- 1/4 cup chopped fresh parsley
- 2 tablespoons minced shallots
- 4 medium tomato – peeled, seeded and chopped
- 1 cup heavy whipping cream
- 1 clove garlic, minced
Directions
- First, cook the penne according to the package directions.
- Next, in a large skillet saute the pepperoni until crispy (about 5 to 8 minutes). Drain all but 1 tablespoon of the grease, and then add the shallot and garlic. Cook until translucent. Stir in the tomatoes and simmer for about 3 minutes.
- and then, stir in the cream and cook until reduced (about 8 minutes). Add the parsley and remove from the heat.
- Lastly, add the drained pasta and toss, garnish with parmesan cheese.
- Pepperoni Penne is ready to serve!
